Lipase catalyzes the breakdown of lipids by hydrolyzing the esters of fatty acids. Lipase breaks down triglycerides into free fatty acids and glycerol. Lipases are ubiquitous enzymes of considerable physiological significance and industrial potential. 

Lipases are used in organic chemical processing, detergent formulations, synthesis of biosurfactants, the oleochemical industry, the dairy industry, the agrochemical industry, paper manufacturing, nutrition, cosmetics, and pharmaceutical processing.

LIPASE FOR FOOD PROCESSING

 

Lipase is widely used for food processing, mainly for the modification and breakdown of biomaterials. A large number of fat clearing enzymatic lipases are produced on an industrial scale. Most of the commercial lipases produced are utilized for flavour development in dairy products and processing of other foods, such as meat, vegetables, fruit, baked foods, milk product and beer.

LIPASE FOR ANIMAL FEED INDUSTRY

 

Lipase breaks these fats to soluble fatty acids which can be easily absorbed by the animal as a nutrient. LIPASE FOR BIO DIESEL PRODUCTION

Lipase enzymes are used in transesterification as they offer several environmental and economic advantages. Lipases are enzymes that breakdown ester bonds especially long chain triglycerides to generate free fatty acids, diglycerides, monoglycerides as well as glycerol. Lipases are divided into three groups depending on their specificity as follows: 1,3-specific, fatty acid specific and non-specific lipases. A 1,3-specific lipase discharges fatty acids from position 1 and 3 of a glyceride and breaks down the ester bond in these positions. in some specific conditions, lipases are involved in other catalysis such as acidolysis, alcoholysis, aminolysis, esterification and transesterification.

 

LIPASE FOR TEXTILE INDUSTRY

Lipase is used in bio-scouring in textile industries. Bio-scouring is a process of removal of protein, wax and oil by using of lipase enzyme.
